Pumpkin Chocolate Chip Cookies 

  • 1/2 cup canned pumpkin
  • 2 tablespoons honey
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • Dash of salt
  • 1 cup oat flour 
  • 1/2 cup dark chocolate chips 
  1. In a bowl, beat together the pumpkin, honey, egg, brown sugar and vanilla extract.
  2. In a different bowl, stir together the cinnamon, pumpkin pie spice, baking soda, salt, and oat flour.
  3. Combine the bowls. 
  4. Stir in the chocolate chips.
  5. Chill the dough for 30 minutes and then preheat the oven to 350 degrees F.
  6. Using a cookie scoop, scoop out the dough onto a cookie sheet.
  7. Press the chocolate chunks into the tops of these cookies and bake for 6-8 minutes.
