Cucumber & Bell Pepper Salad

Lite and perfect for hot summer nights!

IngredientsMakes 2 Servings.

2 Tbsp apple cider vinegar or red wine vinegar
2 tsp balsamic vinegar
4 tsp fresh lemon juice
2 tsp olive oil
1 medium cucumber
1 cup chopped bell peppers
2 Tbsp chopped red onion
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh basil leaves
1 dash Himalayan salt

Combine vinegars, lemon juice, and the oil in a small bowl and mix well.
Combine cucumber, bell peppers, onion, parsley, and basil in a large bowl. Mix well.
Drizzle dressing over salad and toss gently to blend.
